Fig Layer Bars

Dried figs are a sweet reminder of California sunshine, all year round.

Ingredients

Filling

  • 1 - 8 oz (225 g) package dried California figs, stems removed and chopped fine
  • 1 cup (250 mL) sugar
  • 1/2 cup (125 mL) chopped walnuts
  • 1/2 cup (125 mL) hot water

Crust and Topping

  • 1 cup (250 mL) brown sugar
  • 1 cup (250 mL) butter
  • 1/2 tsp (2 mL) salt
  • 1/2 tsp (2 mL) vanilla
  • 1 3/4 cups (425 mL) rolled oats
  • 1 3/4 cups (425 mL) flour, sifted

Procedure

  1. Combine figs, sugar, nuts and water. Cook over medium heat 15 minutes or until thickened, stirring frequently. Cool.
  2. Cream sugar and butter until light and fluffy. Add salt, vanilla, oats and flour. Mix until blended. Spread and pat about half the flour mixture in the bottom of a lightly greased shallow 9 x 13-inch (22 x 33 cm) pan. Spread filling evenly over all. Sprinkle remaining flour mixture evenly on top; pat lightly.
  3. Bake at 350°F (180°C) for 25 to 30 minutes or until lightly browned. Allow to cool in pan. Cut into squares and serve.

Yields: 24-48 bars
