Fig Layer Bars
Dried figs are a sweet reminder of California sunshine, all year round.
Ingredients
Filling
- 1 - 8 oz (225 g) package dried California figs, stems removed and chopped fine
- 1 cup (250 mL) sugar
- 1/2 cup (125 mL) chopped walnuts
- 1/2 cup (125 mL) hot water
Crust and Topping
- 1 cup (250 mL) brown sugar
- 1 cup (250 mL) butter
- 1/2 tsp (2 mL) salt
- 1/2 tsp (2 mL) vanilla
- 1 3/4 cups (425 mL) rolled oats
- 1 3/4 cups (425 mL) flour, sifted
Procedure
- Combine figs, sugar, nuts and water. Cook over medium heat 15 minutes or until thickened, stirring frequently. Cool.
- Cream sugar and butter until light and fluffy. Add salt, vanilla, oats and flour. Mix until blended. Spread and pat about half the flour mixture in the bottom of a lightly greased shallow 9 x 13-inch (22 x 33 cm) pan. Spread filling evenly over all. Sprinkle remaining flour mixture evenly on top; pat lightly.
- Bake at 350°F (180°C) for 25 to 30 minutes or until lightly browned. Allow to cool in pan. Cut into squares and serve.
