Mediterranean Grilled Chicken and Grape Skewers
California flavours add a fresh twist to grilled chicken skewers.
Ingredients
- 1/4 cup (50 mL) extra-virgin olive oil
- 2 cloves fresh garlic, minced
- 1/2 tsp (2 mL) crushed red pepper flakes
- 1 tbsp (15 mL) fresh oregano, minced
- 1 tbsp (15 mL) fresh rosemary, minced
- 1 tsp (5 mL) lemon zest
- 1 lb (500 g) boneless, skinless chicken breast
- 1 3/4 cups (425 mL) fresh California green grapes
- 1/4 tsp (1 mL) salt
- 2 tbsp (25 mL) extra-virgin olive oil
- 1 tbsp (15 mL) lemon juice
Procedure
- In small bowl, combine first 6 ingredients. Whisk together marinade. Cut chicken into 3/4-inch (2 cm) cubes. Alternate chicken and grapes and thread onto eight 12-inch (30 cm) skewers.
- Place skewers in a baking dish. Pour marinade over skewers, coating each one. Marinate for 4 to 24 hours.
- Remove chicken skewers from marinade and let excess oil drip off. Season with salt.
- Grill until chicken is cooked through, 3-5 minutes on each side.
- Arrange on serving platter and drizzle with olive oil and lemon juice. These can also be made as appetizers on 6-inch (15 cm) skewers.
