California Asparagus

From the edge of civilization, poets have sung
the song of asparagus. Artists have painted it, craftsmen have
recreated it, photographers have captured it, healers have prescribed
it, and epicures have sighed over it. Asparagus, one of nature's
most beautifully designed vegetables, has inspired even kings.
Evocative, lean, richly colored and so pleasantly textured, asparagus
has a mythology all its own.
We know asparagus is a good source
of vitamin A and C and of the minerals potassium and phosphorous.
Modern medicine uses the root of the plant as a diuretic. Beautiful
and delicious, asparagus is also low in calories when left alone.
